Easy Chicken and Bacon Pasta

This recipe is so easy to make, it's barely a blog post at all! I thought it was a good time to post it, as a new batch of students are beginning to think about life at university. If you click the Recipes tab, you'll find lots of other easy-to.make recipes for practising cooking skills, most requiring just a few, low cost ingredients. Our two favourites are Easy Sausage Casserole and our Baked Salmon recipe. Today's recipe is a bit of a cheat, because it involves a tin of soup, but it's cheap and tasty, so I think it's acceptable. Read on, to find out how you can turn a tin of soup, into this...

Chicken and bacon pasta ingredients

You will need...
100g of Mushrooms
1 Chicken Breast
3 Rashers of Bacon (ideally smoked)
1 tin of Chicken or Mushroom Soup
And 4 good handfuls of Pasta

This should serve at least three people, depending on appetite!

Bacon, mushrooms and chicken frying in a wok.

All you have to do, is chop the chicken and bacon into small pieces and fry, in a little oil, for about five minutes, in a large pan or wok, before adding the mushrooms (chopped and peeled). Continue frying, over a medium heat, until the mushrooms are browned and the chicken is cooked through. In the meantime, cook the pasta, as per the instructions. It doesn't matter if it gets cold while you wait for the meat to cook through. Once the meat is ready, add the drained pasta to the wok, along with the chicken or mushroom soup, stir well and allow to simmer on a low heat for about five minutes, until it's bubbling, stirring occasionally. Once it is piping hot throughout, serve and enjoy!

Perfect for students, this delicious recipe is so easy, anyone can do it!

  1. This is such a quick and easy recipe, I love it! Will add it to the menu I think. We do one similar with cream of mushroom soup, chicken and pesto - it is absolutely delicious and feels like a really naughty tea when you are trying to ignore the calls of a takeaway menu.

  2. Sounds lovely - and so easy - thank-you!!
