This caramelised carrot recipe is very simple to make, using just a few ingredients, and is always really popular with children, due to the sweetness. Happily, it offers a good way to get vegetables into even the most reluctant vegetable consumer. However, as they do contain sugar, they are not the healthiest of vegetable options, so are probably best reserved for a delicious occasional treat. They do get children used to the texture of vegetables though, so might be one to consider if you are in possession of a really committed fussy eater.
1 tsp Olive Oil
25g Butter
4 Carrots, Peeled and Thickly Sliced
1 tsp White Sugar
1 tsp Brown Sugar
(I used Demera, as I'd run out of brown, but dark brown is better!)
Heat the oil and butter in a pan, until the butter has melted.
Add the carrots, cover and cook for 15 minutes, or until carrots have begun to soften.
Add the sugar and stir frequently for about 10 minutes, until the carrots caramelise.
Remove from the heat and serve.
Mmmm...I love to do carrots in the oven and let all the natural sugars come out. Will have to try this recipe - could actually get hubs enjoying his veg :-)
