Nutritious, Low Cost, Three Minute Scrambled Egg!

Scrambled Egg on Toast with Title OverlaidThe humble egg often gets overlooked these days as part of a healthy diet, but, in terms of nutrition versus cost, you really can't 'beat it' (ahem). Containing just 70 calories each, along with high quality protein, there are also a host of B vitamins, minerals and even trace elements of Phosphorus, all packed into its relatively tiny shell. There are lots of different ways to create a healthy lunch, with hardly any effort, using eggs and it's a great way to fill you up and prevent that pesky mid-afternoon snack craving. There is a recipe for  Lazy Eggs with Ham here, but today, I thought I would share with you a favourite of mine, which takes just three ingredients and literally two minutes to cook.

Scrambled Egg (or Eggy Mash, as my son calls it!) 

Eggs, Mlk and Butter
All you need for one person is: 

2 Eggs
A Splash of Milk
A Knob of Butter

It's so easy to make in the microwave, just whisk all the ingredients together in a bowl, Shove in the microwave for 30 seconds, remove, stir vigorously, smashing up any big lumps, and shove back in for another 30 seconds, Depending on your microwave, this may be long enough, but you can always pop it back in for a few more seconds if it's not quite done.

If You Have The Thyme... 

If, like me, you love a bit of garnish, there are many options where eggs are concerned. Eggs have such a mild flavour, you can really change the taste and appearance of your dish by choosing your herb carefully. It's a good opportunity to experiment with different herbs as you can't really go wrong and it's down to personal taste whether it works for you or not. If you are unfamiliar with using herbs, though, I recomend something straightforward like a little thyme to start you off. I sprinkled on some dried thyme just to add flavour and make it look pretty, but you can use chopped fresh thyme if you have it, perhaps adding a sprig to garnish, if you want it to look a bit special.

  1. I would never have thought to add thyme to eggs! I'm just getting a herb garden going on the patio so I will def. be more adventurous :-)

  2. I never thought to add thyme to eggs, I have previously tried chives but will add this to the mix next time! :)

  3. I love scrambled egg on toast, its so quick and easy to make, with 4 children to take care of i need something quick to make and eat once all are in bed and this is fab
