Pizza Cake



Today's cheat is less about nutrition and more about playing with your food, 'e' numbers and sugar. Well the 'e' numbers are optional, but you get the idea. Yes, it's been half term and as the nights are drawing in, the kids and I have come up with a fun, and pretty easy way to entertain ourselves and make something really yummy!



Pizza Cake!

150g butter or margarine
150g caster sugar
150g self-raising flour
3 eggs
few drops vanilla essence 

Add the butter and sugar to a large bowl and cream together thoroughly. The mixture should be pale in colour and fluffy. Sift the flour into a separate bowl. Beat the eggs into the butter mixture one at a time, adding a spoonful of flour with each. Then fold in the rest of the flour and vanilla essence. Divide between two 20cm sandwich tins and bake for about 20mins at 190C, until golden brown and springy when pressed lightly. 


When the cakes are cooled, turn them onto a flat surface and they will form your 'pizza base'. Next ice your cakes. I used butter cream (100g butter/marg, 225g icing sugar, a little vanilla essence, tbs milk, mix well) as it had an authentic yellow colour to look a bit like cheese! Once iced, you can decorate your 'pizza' with anything you like, my children went mad with the sweets, but you could use nuts, chocolate buttons, or, if you have the time, you can use royal icing and food colouring to make realistic toppings! My daughter used red bootlaces to represent the tomato sauce, because my son doesn't like jam, but you could add a layer of jam before the butter cream for extra realism! However you decide to decorate, they are absolutely delicious and lots of fun!
