Easy Tomato Soup with Bacon

There are over 10,000 varieties, they are cholesterol free and are, in fact, the world's most popular fruit. today we are talking about tomatoes! Everyone's discussing healthy eating at the moment, so I
thought today's Tuesday Cheat ought to be a healthy one. But also quick, because, I don't know about you, but the first thing that pushes me off the healthy eating wagon is usually lack of time.


It helps to be organised if you want to stay healthy. I've started making everyone a lunchbox (including me!) the night before and we are all seeing the benefits. I have also, though, been looking at natural 'ready meals'. Meals that don't take any longer to make, or clean up after, than a trip to the chippy! There are a few foods that can really save time and money when you're in a hurry. A favourite of mine is soup. It's really useful for using up perishable food that's lurking in the back of the fridge. Which brings me back to tomatoes! I never eat as many tomatoes as I think I'm going to, so there's always a few waiting for the blender! Here's my favourite tomato soup recipe. The bacon gives a balance of flavour, so it's not all tomato!

25g Butter or Margarine
1 Medium Onion, chopped
2 Bacon Rashers, chopped
750g Tomatoes, chopped
300 ml Water or Chicken Stock
1 tbsp Tomato Puree
Pinch of Dried Basil
Salt and Pepper (to taste)
1 tsp Sugar

Heat the butter or margarine in a saucepan. Add the onion and bacon and fry for several minutes, until onion is soft and bacon is cooked through. Add the tomatoes and water or stock. Cover the pan and simmer for twenty minutes, stirring every few minutes to prevent it burning on the bottom. Blend until smooth, then return to the pan and reheat until piping hot. Serve with crusty bread.
